Apricot jam Picnic, Alchi 2015
Every year, we all camp out at Alchi Gonpa for two days and make several hundred jars of apricot jam. We will enjoy this tasty fruit in the winter when there will be no salad or fresh fruit available in Ladakh for 5 months.
Alchi gonpa has dozens of apricot trees but they only want the seeds, for oil for offering lamps. They don’t need the fruit, so we can have the fruit for free if we collect the seeds for the gonpa.
Our jam contains only apricots and sugar. It is preserved with heat, by boiling the jars after they are filled and then keeping them airtight.

- Collecting apricots
- Take the seeds out and reject buggy ones.
- Chop them roughly.
- Making apricot jam
- Fill clean boiled jars and wipe the edge.
- Boil the closed jars for 10 minutes. Now they are sterilised and cannot go bad in storage.
